CHICKEN CURRY with CORN & APPLES
Ingredients:
Season
- 500 grams boneless chicken breasts, cubed
- Salt and pepper
Sauté and sear
- 2 tbsp oil
- 4 cloves garlic, minced
- 1 small onion, chopped
- 1 tbsp ginger
- 1 tbsp curry powder
Pour vegetables and cream (thicken)
- 2 cups apple, small cubes
- ½ cups mixed peas and carrots (frozen)
- 1 can sweet corn, whole kernel (set aside brine)
- 1 cup sweet corn brine (add water or chicken stock if not sufficient)
- 2 cups cooking cream
- patis to taste
